Crunchy Beef Tacos Recipe

“When I was a kid, Taco Bell was probably my favorite of the fast-food options in our town,” singer/actress Demi Lovato writes in her debut cookbook One Plate at a Time: Recipes for Finding Freedom With Food. “So when I get a craving for that combo of crunch, spices and cheesy, beefy goodness, I’ll make myself a couple of these hard-shell tacos. They make me feel like a kid again, and the flavor still hits.”

1 Tbsp. olive oil
1 lb. 90/10 lean ground beef
1/2 white onion, chopped
1 (1 oz.) envelope taco seasoning mix
1/2 tsp. kosher salt
1/2 tsp. cayenne pepper or chipotle chili powder (optional)
8 hard taco shells, warmed
1/2 cup queso blanco dip or shredded cheddar cheese
3 romaine lettuce leaves, shredded
1/2 cup pico de gallo
1/2 cup sour cream
1 avocado, thinly sliced

1. Heat oil in large skillet over medium high. Add beef; cook, stirring often and breaking apart using a wooden spoon, until lightly browned and almost cooked through, about 3 minutes. Add onion, taco seasoning, salt and cayenne; cook, stirring occasionally, until beef is cooked through and onion is softened, about 5 minutes. Stir in 1/4 cup water, and cook until saucy, about 30 seconds. Remove from heat.

2. Spoon beef mixture into taco shells; top each with 1 to 2 tablespoons of cheese. Add lettuce, pico de gallo, sour cream and avocado.
